The ancient mill Zoratto, it opens his doors only for us! The mill dates back to 1450 and became property of Zoratto family in the 19th century.

It is one of the most beautiful mills you can see, with all the hydraulic structures in ancient wrought-iron used to grind grain and also to beat stock fish. Just beyond the old mill you will find the old building used for the beating because Umberto Zoratto is the only one who beats the stock fish in Italy.

 

11.30 am: PROSCIUTTO DI SAN DANIELE

Preparation of San Daniele ham requires a long process with many delicate stages according to ancient tradition. The real secret is however the local climate consisting of the encounter of the cool Alpine currents and the damp Adriatic ones. The land’s moraine nature favours ventilation and is excellent for seasoning. The environment is of great importance and is therefore safeguarded.

12.30 pm  LUNCH in one of Friuli Venezia Giulia La Via dei Sapori restaurant

Twenty chefs of the region gathered together in the Consortium “Friuli Venezia Giulia via the Sapori” to defend and preserve premium quality food service. Their goal is to continue tradition with some innovative flairs but always using traditional and local ingredients.

02.30 pm:  COLLIO WINES

Unique native grape varieties are cultivated in Friuli Venezia Giulia such as the Friuliano, Ribolla Gialla, Malvasia Istriana and Vitovska, in addition to internationally-renowned grapes.

Though international varieties, when grown here, they present unique distinguishing characteristics such those we find in the Pinot Grigio, the most-cultivated grape variety in the region There are also reds of an excellent calibre, such as Pignolo, Terrano, Refrosco dal Peduncolo Rosso, Cabernet Franc, Cabernet Sauvignon and Merlot.
